KTC Summer Bean Salad with Tuna Recipe

Summer Bean Salad with Tuna. Makes: 8


150g French green beans
1 x 400g tin KTC rosecoco beans, rinsed and drained
1 x 400g tin KTC black eye beans, rinsed and drained
1 x 400g tin KTC red kidney beans, rinsed and drained
¼ cucumber, deseeded and sliced
100g cherry tomatoes, halved
½ red onion, finely sliced
30g rocket
130g tinned tuna, drained
small bunch of chives, roughly chopped
2 tbsp cashews, toasted

For the Dressing
4 tbsp KTC extra virgin olive oil
2 tbsp KTC lemon juice
1 tsp Dijon mustard
1 tsp caster sugar
½ tsp KTC garlic paste


  1. Firstly make the dressing. Whisk together all the ingredients and season to taste.
  2. Blanche the green beans in boiling water for 7 minutes, drain and refresh under running cold water. In a large salad bowl toss together the beans, cucumber, tomatoes, onion and rocket with the dressing. Scatter the tuna over the salad and finally add the chives and cashew nuts then serve.
